Greetings,
I hope everyone had a wonderful Easter holiday. I had an early morning surprise from the man in my life. He stopped by and gave me fresh tulips and a sweet card. It was unexpected and put a smile on my face for the rest of the day.
Then I took an early morning walk along the dirt roads surrounding my place and picked up coffee at a little stand nearby and said hello to a few of the locals. I love living in a smaller town where you see familiar faces every day.
Then I headed back to my little house and began a few traditional Easter dishes (recipe links below) since my big city son, and his girl, were coming over for dinner later in the day. They recently returned from a trip to Portugal and had a lot of things to share with me.
Portugal nougat, canned codfish, and a yummy cherry liqueur that the locals put in their coffee to start the day off right 👀 (I haven’t tried it yet.)
Among the traditional dishes, I found a spiral-cut ham at Safeway for only $7 and made it fancy by using a Honey Ham Recipe with substitute ingredients I had on hand. I also put together the boy’s favorite Homestyle Scalloped Potatoes. Then I tried something new that turned out to be the star of the table that you might like too.
The Spring Vegetable Tart turned out amazing and it was so easy to put together.
(In case you’re wondering. No, I’m not going to become a food blogger 😉 I just like sharing the wonderful things I find in life. ) It’s funny how the best food is either what you already have in your pantry or directly from your garden. I would be right at home on a farm.
I sent the kids home with most of the leftovers but I still had a bundle of asparagus and a little leftover ham…so I made Cream of Asparagus Soup and it was perfect for getting back to my regular diet after the Easter Feast. I love cooking big once in a while and seldom get the chance now, since my children are grown and on their own.
You might be wondering what is going on in my writing life…and there’s a little news. I’m working on something new and you’ll be the first to know. No prereleases or hints because I’m afraid the idea will fade. Instead, I’m going to keep it to myself and let it flourish.
In the meantime, I do have to let you know that the Frontline Preparedness Event, that was scheduled for May 2nd, has been postponed by the organizers to sometime this summer. When I receive more details, I will let you know. I do have a box of books that I can bring to sign and sell.
